Can we get a motherfucking chicken salad thread?
I made this earlier:
1lb boneless skinless breast
bring to boil covered with about 1" extra water, reduce heat to low and poach for 20 minutes, with crushed shallots, salt, pepper, thyme, minced garlic, oregano, cayenne pepper in the broth
let cool in broth, then chop into 1" chunks
the dressing:
1/2 cup smart balance mayo
2/3 diced braeburn apple
1tsp lemon juice
1/2tsp dijon mustard
1tsp sugar
pepper salt
I know it's not fancy or anything but it's easy, approachable, and very good. I wanted to put red grapes and celery in but I was too broke to buy red grapes and celery. Favorite chicken salad ingredients?

I can back this up. It adds a delightful sweetness and crunch.
Also OP, you don't need the grapes. One fruit is enough. I would highly recommend the celery in the future however. It's sadly underrated.

I boil my breasts in chicken broth.
Shred them up, add celery, red onion, little red/yellow bell pepper, mayo, cayenne, salt and black pepper.
Put that shit on toast with arugula and a tomatoe and you're good to go

diced celery
lemon juice to taste
salt + white pepper

My mother's chicken salad recipe uses onion and celery rather than apple. I should try it with apple some time.
Chicken Salad
2 chicken breasts, boiled and cubed
4 tablespoons mayonnaise
1 tablespoon sweet pickle relish
1 large apple, diced
1 cup chopped pecans or slivered almonds
2/3 cup raisins
salt and black pepper, to taste
In a large bowl, mix all ingredients and chill.
