Got pic related. Not sure which of the oils I have on hand work best.
Grapeseed - current favorite for general cooking.
Sesame - delicious but I only have a small amount
Avocado - only tried it once (on fish) before
Olive - smell makes me feel ill so I limit using this.

Baking (roasting) in the oven. I don't have access to a grill or open fire. I've read that deer is so lean it requires added fat.

I cannot tell if you're serious. Closest thing I saw was bacon, which I rejected because I want to eat venison, not bacon-flavored venison. I enjoyed venison as a kid and my roommate only got to try jerky, so it's key that this turns out well so he can also know the joy of fresh cooked deer.

Indeed. But cooking oil won't really help you there. Better to lard the meat (insert fatty bits into it), or bard it (wrap it with bacon or similar).

Anyway, as for your oils:
-Grapeseed or avocado would both work fine
-sesame: this has a strong flavor and burns easily. think of it like a sauce, not as a "cooking oil". Add a little to your stir-fries but don't try to cook anything in it.
Olive: this comes in various types. You mentioned that it had a smell so you probably have EVOO. Like sesame oil, that's for low- or no-heat use. On the other hand, regular aka refined aka "light" olive oil would be fine for cooking with and it does not have an appreciable smell.

Sesame oil goes rancid fast and has a potent flavor.
Avocado has a high smoke point but it also has a discernible flavor.
Olive is kinda like sesame oil except less egregious.
Don't use grapeseed. Just don't.

Have any reasoning for that? It works great for pretty much everything (except salad, but I don't put plain oil on my salads). Doesn't set off respiratory problems like canola, Doesn't have a risk of phytoestrogen like soy. Corn oil just generally adds corn flavor. All around great oil as far as I'm concerned. Also do you not refrigerate your sesame oil?

Honestly, olive seems like the most reasonable way to go about this. Maybe rub it with some fresh herbs and garlic?
