What pasta?
Italian - generally powdery semolina
Central european - for bakeking pasta? Softer, powdery non semolina flour
For spaeztle and similar - semi coarse non semolina flour
Buckwheat noodles - buckwheat flour probably mixed in with semolina.
There's an incredibly large amount of stuff you can make. And depends on what you're trying to do.

I used semolina for Italian pasta, but then I tried using some plain ol' AP flower and found it to be fine.
Now I just stick with AP.
