I never got around to posting this last week, and I've been lazy on the cooking side for this week.

So chocolate dipped coconut macaroons as a cook-along!

Ingredients :
200g shredded unsweetened coconut
1/3 cup sugar
2 table spoon cornstarch
1/3 cup liquid egg whites (or, you know, regular egg whites)
90g of dark chocolate

1. Pre-heat the oven to 350F.
Combine the sugar, cornstarch and coconut in a bowl.

2. Add the egg whites.

The bags are sold as 200g bags. So the volume would be 1 bag.

But I'm kind enough to know that not all brands will same bags the same volume. Unl;ess, off course, you shop at the same grocery store then i do and can get exactly the same bag. Then, just write "1 bag" in your own recipe card.

3. It will look like it’s not enough liquid, but just keep mixing, it will coat everything.

4. Form balls about the size of a golf ball. Press firmly so the mixture sticks to itself. Put on a baking tray lined with parchment paper. Aim for 16-18 macaroons per recipe.

5. Bake for 15 minutes. The coconut should just be turning golden on top.

6. Allow the macaroons to cool to room temperature. Meanwhile, melt some chocolate (temper it for a shinier final result).

7. Dip the bottom third of the macaroons into the chocolate. Return to the parchment paper lined tray and allow to set, at room temperature, for 1 hour.

8. Plate and serve.

They will keep for about a week in a hermetic box. Avoid putting them in the fridge, however.

yes, it helps them stick a bit better and I was having some gluten-free people over and i wanted to avoid flour.

I usually use Cacao Barry, but I was out and the store that carries it a about 1 hour out of my way. So I dropped by the bakery/chocolate seller near my place and sweet talked the baker into selling me a bit of her supplied :-)
