Good choice comrade. I've been making my bread with wild yeast levain for years. If you keep some 100% hydration starter around and are able to do some second grade math, you can incorporate it into any bread recipe instead of using commercial yeast.

"Sourdough" isn't a type of bread, it's a means of leavening - you can make sourdough challah, sourdough baguette, sourdough sandwich bread, sourdough Hawaiian rolls, etc., and depending on how the yeast are treated the result might not even have a sour, tangy flavor.

The sour in sourdough is lactic acid. Just like yeast eats flour and makes C02 and alcohol, lactobacilli eat it and make lactic acid. There are some other enzymes at work, too, I think. But that's the main one.
Also you pretty much need to be at around room temp for the lactobacilli to function. You won't get much, if any, sourdough flavor cold-curing dough, although the yeast can still function.

Anyhow. Best bread in the world is freshly baked sourdough bread from Matera in Basilicata. Second place goes to Altamura bread.

Pizza bread. It is a nice sweet bread with ketchup, cheese, mayonaise, some parsley for colour, and a hot dog. Great way to start the morning at Korea's bakery.
