The trick to getting them like that is to parboil them in water with baking soda.
The alkaline pH of baking soda fucks up the cell walls of the potato, creating that porous starchy layer on the outside that gets crispy and browned. A bit of rough handling also helps. It creates an outer potato layer that's not unlike a "breading".

The recipe is from Cooks Country/America's Test Kitchen.
Google "baking soda potatoes" and you'll find a few variations of this. Baking soda really changes a lot of food chemistry, but few people actually understand it enough to use it to their advantage.

Don't feel bad OP. When I was 16 I ate strictly potato dishes for 5 months. I would just buy a shitton of potatoes and make them a bunch of different ways. At the start I was lazy and just mashed them and ate them out of a bucket, but as time went on I made some pretty fancy shit.

I use butter for that.

I prefer to do it as round disks of potatoes and with onions.

Slice potatoes and boil until nearly done.
While boiling, slice onions into rings and brown in butter i the pan. When done, set the onions aside until the potatoes are done.
Add butter to the pan and bring up to temperature.
Carefully lay the potato slices in the pan one layer thick.
Add salt and pepper.
Toss the onions on top.
Let fry.
When at the desired tenderness carefully turn over and try to keep as much onions as possible on top.
When done, drain on paper towels while you wash the pan. Serve with whatever else you have.

One thing I really like these with is sausage and saurkraut.

I have one! Nobody's asked on this board that I've seen so I'm going to use this as an excuse to geek out a bit.

Got one because I live in Hong Kong and my flat is small as all fuck so footprint is one of the most important things when I consider any purchase. I got the "big" one from Philips (pic related) with a 3L capacity which is still way small but lemme answer your question.

They are essentially convection ovens with a fan that goes way faster than a standard convection oven. This heats it up faster and heats the food more thoroughly than a regular oven. It also preheats way faster (I don't even bother, I just add a few minutes to cooking time and that sorts it). These factors combine to make the best oven fries you can get (besides actually deep frying them probably).

Things to consider: There is a lot of very hot air moving very quickly, so it's going to dry things out. The way I prevent this is to use a spray bottle of olive oil and lightly dust the tops of things I throw in. It seems to help and encourages browning. Also, it's a bit of a pain to clean because of the fry basket but you can put some foil on the bottom of it. However, if you do that it wont cook as quickly or as well because the air isn't allowed to pass through the entirety of the food.

One thing it's really good for is reheating leftovers. I use it like my microwave for reheating food I want to be crisp because microwaves makes food limp and soggy. I microwaved some leftover McNuggets and they came out better than when I got them from McD's. Another thing I do with it is just chop some vegetables like eggplant, potatoes, celery, okra, broccoli, etc and toss them all in with a bit of olive oil, salt, and pepper and they roast really well without all the fuss of laying them on a tray and making sure nothing is touching and it roasts faster than in a traditional oven.

According to a fan page it's difficult because the air pushes the batter off the food but some people have gotten around this by doing a bit of pan frying first and finishing in the air fryer.

I'd say the machine is more of a roaster, because I've done dry rubbed chicken and pork and they came out crispy and delicious so that worked out well.

You can adapt a lot of recipes for the machine, you just have to consider there's a huge fan pushing air at super high speeds at the top of the food and is the food set up to accommodate this?

I haven't tried to make fresh fries from potatoes with it, so I wouldn't know from that angle, but the pre-fried frozen fries you're supposed to but in the oven come out like deep-fried fries with less oil. However, if you're looking to doing it from scratch you'd probably have to deep fry or at least pan fry initially and just finish and crispen in the air fryer.

I cut them into wedges, drenched in olive oil and cayenne, chili powder, cumin. Bake them in the oven. Delicious.

It's pretty much the best root vegetable.

Basicaly, in a large pot of boiling water, you start adding salt and keep adding until no more will dissolve. Something like one cup of salt to six cups of water.

Drop the potatoes in and cook about 15 minutes or so. Remove the potatoes and eat with melted butter.

The potatoes come out both fluffy and creamy.

What the salt does is raise the boiling point of the water. Instead of 212 boiling, you should bet a little better than 222 boiling, I think.

The greater the altitude, the further the boiling point will fall and so you won't get the full 222 degree boiling point to cook the potatoes.
