Seconding this - I eat roasted sweet potatoes, yams, and other roots all the time and I never really like anything I pair it with.

I think that if you want it to be more than just a side and truly pair with a dish, then you need to either mash it or add a sauce like this : http://www.moosewoodcooks.com/2011/10/navajo-stew/

Once that's done there is plenty that it could be paired with.
