I don't have a slow cooker. Usually I season it with a ton of spice. Brown in a super host cast iron and then simmer for a an hour or two in chicken stock
I usually bake a bunch of chicken half done/almost cooked and put it in the fridge when I need it.
I take it out, slice it up really well and throw it on a really hot skillet with oil for a minute of two like a stir fry. Add tapatio/salt/cumin/crema/whatever i have at the end right before I turn the flame off.

If you're going Mexican themed, do this:
>boil chicken until cooked (meat slides off the bone
>remove chicken and empty water until there's just enough to cover what will be shreaded chicken (2 or 3 inches high)
>add salsa to water until consistency is thick
>bring to a slow boil
>shread chicken with knife and fork, then return to salsa boil
>cover and simmer for 10 minutes while periodically stirring
