how to make a perfect, traditional thanksgiving turkey? I want crispy skin and soft, moist turkey. I'm cooking for some rich people who might commission me for holiday cookies/treats which would be good money.

I need THE perfect turkey.
I was thinking about adding apple or pear to the stuffing. what do /ck/?

Cook it upside down. The breast meat is the dryest so if you cook it upside down it is more like braising so it remains moister. Turn it back over and brown the top before serving. Alternatively use a baster to continuously moisten the breast while cooking or bard the top of the turkey with bacon while cooking and brown it before you finish.

THIS. Soak your cheesecloth in a mixture if white wine and melted butter. Then use the remainder of wine and butter to baste. Best turkey ever.

Works the same for turkey, will probably take like 8 hours to cook. You can even skip the brining and drying step. Also don't stuff it, stuffing needs to be cooked a higher temperature.

Waddamean WTH? Cheesecloth is some bad*ss cooking stuff. I also use it for making glogg, that holds orange peel, cinnamon stick, cardamom pods and cloves to simmer in some wine to spice it.
