If I were to do a dinner theater deal but with movies I'd want to serve dishes that are easy to eat in a dim setting where your eyes are fixed on something else, ie ones that aren't so messy it's a serious problem if you miss and bump the plate or drop one. Croquettes and fritters with a flavorful sauce, served in one of those divided dishes so that bumping the dish while going for a dip won't spill that shit all over the place. Skewers of various sorts, with a nice flavorful marinade. Pocket sandwiches/calzones/bao buns. Caramels and the like for desert.
Powdered donuts, BBQ ribs, chicken wings, meatball subs, crab legs, ice cream cones, fettucci alfredo, jelly filled donuts, sushi, tacos, chili dogs, and watermelon.

Fresh-Popped flavored popcorn.
I'd probably start out with standard salt and butter and a few sweet flavors like cocoa, cinnamon sugar, peanut butter (using powdered peanut butter), and vanilla bean. Potentially have some variants with freeze-dried fruits (strawberries, cherries, mangoes, etc.) ground into a flavor powder. Maybe mix various combinations like chocolate peanut butter, cocoa vanilla, cherry chocolate, strawberries & cream, etc.
Savory options could also be added. Things like chili lime, sriracha, and salt & pepper. Hell, I could even use bouillon powders for some more "adventurous" flavors like chicken noodle soup and curry pork, although testing would have to be done to find a good flavor balance.
In all honesty, I feel like it'd work out really well. All you'd have to do is add the flavor powder and shake it at the counter for the customer.
