Ramen is a JAPANESE noodle. While yes, the noodle soup dish has Chinese roots and was originally from China, it's evolved to be authentically Japanese in the way it's prepared and the flavors that cater to a more Japanese palate.

The way RAMEN noodles in Japan are made are also especially different from the LAMIEN noodles are made in China, since ramen uses kansui, a mineral water in Japan making the flour turn yellow and more firm than the Chinese lamien noodle which is a lot softer and can be stretched and pulled.

Ramen originates from Chinese la mian. The Chinese pull theirs and the Japanese cut theirs. Both noodles are made with some fort of alkaline in them which helps to gelatinize the starches to give it the ramen texture.
