What do you guys like to do with coconuts? What food should someone try that goes great with coconut?

mix a little shredded coconut into some panko bread crumbs.
dredge shrimp in crumbs. deep-fry.
I only like it for desserts, really. Otherwise I just eat it plain. Young coconut is especially tasty.

I use the milk in my pancakes.
It tastes a little wierd at the beginning, but you get used to it.
