Because not all Iranian food is Persian. Persians make up the largest ethnic group in Iran, but there are also Khurds, Azerbaijani Turks, Lurs, Arabs, etc.
Had a friend from iran cook me dinner once. It was nice and all be he served these cripsy rice things that apparently are popular there.
It tasted basically like rice that had been left for a week to harden.
