The ostrich would pretty much be a a gory mess of mashed bones and massive amounts of internal injuries.
In a general situation, maybe the ostrich could spook the cow and scare it off.
In a situation where both animals are determined to hurt each other the cow would obliterate the ostrich.

It is simply because it is a well known fact that male-cows/bulls are clearly more aggressive and willing to fight due to their very high levels of testosterone.
There are simply more female cows in the world because of this, and the fact males fight a lot over females. A baby male cow is more likely to turn into veal if not a breeder or "entertainer" (so to speak)
