How do I tell my professor I have depression?
He is emailing me asking me what's up, how do I tell him the reasoning as to why I'm isolating myself and trying to get off the grid?

It's totally up to you. If you do, he should even be able to point you toward some useful resources on campus. If he's a professional and compassionate person, he might even cut you some slack on whatever it is he's waiting for from you.
I really recommend telling your folks, though. Suffering from depression alone is awful.
I mean, it's always awful, but more so when you're alone.
