But she's a pushover.
Any time she wants something, she doesn't bring it up, avoids it- or waits for me to say something.
I legit almost always feel like I'm taking advantage of her.
How do I deal with this? What can I say/ask?

Leave her and find a new girlfriend. It's hard but it's the healthiest thing you can do.
Don't beat around the bush: Ask her why she is so hesitant with you.
Say you think it's because you are starting to feel like she has self esteem issues. Then say you can hear her out.
