That's because the child usually has hours and hours of instruction (living with mommy who talks to the child in that language).
If adults also immerse themselves that way, they learn faster because they're smarter. Unfortunate, unless OP moves to France, he'll at most get 2 hours of instruction per day.

This is an easy one. There has been loads of research on the topic, and little kids learn second and third languages much, much more easily than adults.
