I am fine with anything not RAGS or pointlessly using a huge amount of resources (i.e. pick the right engine for what you want to make), as long as it provides enough gameplay, which almost all VNs completely lack.
It's more about the story, writing, art and actual mechanics, as well as the porn to grind ratio).
I am not really happy with any of the engines for what I want to do, so I am making my own.

Honestly can't say. I don't have extensive coding knowledge, and really don't know what would be best for this. Python is the trend for all programming right now basically so I figured why not. If I wanted to make a brand new game with mechanics from the ground up, I'm sure C++ would give me much greater control, but Ren'Py really does so much of the ground work that I couldn't pass up.

In my opinion, if the story is good, add more porn. We don't have nearly enough porn games with any thought on the actual story or gameplay elements being fun and enticing. There are plenty of Japanese games, like Rance for example. It would be a complete game even without the porn. It's just a well done porn game. We need more of that! I want to be invested in the story and the characters. I want to (even if only a little) enjoy the gameplay up to the point of the sex scenes. Just because it's a porn game doesn't mean it has to have a porn movie plot like you see on HBO or whatever. I think many of the creators just don't take their games seriously if they decide to make porn games. It's porn, it has titties, I'll let the titties sell the game. No one wants to play it, they just want to look at titties. It doesn't have to be that way. Yes, it will take much more effort and dedication to do so, but I think it would make many people happy.

For instance, shy chicks usually have long bangs, right? Tomboys have shorter hair. You could map hair colour to other personality traits: lighter colours are seen as more extroverted than darker colours, that kind of thing.
Same kind of thing applies to clothing.
Once you've got the parts you want to include, just mix and match until you've found something you like.

I like to stay on the latest OS. Partly for security, partly for improved performance (I do a lot of computational programming; even a few percentages faster saves me noticeable time), but mostly so I don't get 'left behind' and the changes I have to adapt to are small. e.g. see the people coming from win7 and being clueless about 10, compared to those coming from win8/8.1.
I admit I was disappointed by 8. I was part of the beta, and kept telling myself "this will be fixed by RC". But after the upgrade, my win7 license got converted to win8. Couldn't go back. But to be fair, the search in win8 was pretty solid. Found both programs and files, maybe 70% of the time. I pinned the programs it couldn't find to the task bar and installed an alternative start menu.
I went to win8.1 to get away from win8.
And I went win10 because I want dx12, and I actually liked it during the beta. I even like the new 'modern' start menu. I only have browsers, windows explorer, and sublime text pinned to the task bar (and nothing on my desktop). I use the search for everything else.

If anything, Win10 is /more/ secure - or it will if UWP takes off. No more dll spewage all over my machine? No more registry edits for a simple third party tool? No more bloatware add-ons? Software kept relatively 'sandboxed' away from areas it doesn't absolutely need for its operation? Sign me up.
I know that Matlab, Comsol, NX, and SolidWorks will never be UWP programs, but non-computational-heavy programs will benefit greatly. Devs will benefit too, since they'll actually be able to push updates, and don't need to worry about compatibility as much.

RAGS has its pros and cons. It handles a lot of the coding on its own, and is fairly functional for adventure games, so for first time coders it can be a pretty good engine, and people with a lot of experience and knowledge on how to handle it can do some actually pretty impressive stuff.
But the UI, while serviceable, is clunky, can't be customized, and has a tendency of causing minor warping in images that aren't to its exact specification. There's also the lack of forward and backward compatibility within the engine and games made in it, you need to match the game to the engine version it was made in, and save files to the version they were saved from, or everything breaks..
It's good for small games, and first time projects, but the bigger the game, the more apparent its flaws become.

Thats because some RPGmaker games do things weird, making it hard for Cheat Engine to identify the proper values. This page talks specifically about The Last Sovereign, but the results seem to make Cheat Engine work with all RPGmaker games:

Here is an approximation of the proposed gameplay / engine that I made in RPG Maker. The game relies largely on RPG Maker assets and the Character Generator for graphics, with me having merely edited some of these assets somewhat and are not meant to be definitive (although I'd still like to hear anything regarding me going to the right or wrong path).
There are a couple bugs that can trigger if you make Sansa interact with the wrong thing in the middle of a cutscene, but these should be uncommon and I haven't found any other bugs.
My original intention was for the game to last roughly one hour and contain roughly 12 CG. Right now, it looks like the gameplay would probably go boring much earlier, even with more CookieClicker elements and progression thrown in, and it also seems like I will probably need to make at least 20 original CG (with some variants). Do you guys think the gameplay could hold that long? Is it fun at all (for a porn game)? It is difficult for me to decide because I know the game down to chances of success. The whole game is probably still just a little bit more complex than some optional mini-games sometimes found in RPGs.
Note that by no means is the game meant to be some kind of Magnum Opus, or even personal on any level. It is mostly something I am doing to test the waters of making Adult Games. If I have not finished the game and all its CG by October I will probably think I have failed.
The file is currently a bit heavier than it could be, because I didn't want to delete some animations and sound effects that I thought COULD be useful later on.

The game currently starts out with some "perks" that would, in the final game, have to be grinded towards or purchased from the other prostitutes (seeing the client names and kissing the other girls to gain extra attention and thus extra money). A perk that isn't currently programmed is dancing on the large table on the right to attract more attention. I am not sure about what other perk to add. Any ideas?
Some ideas that I tried during implementation included a Sanity Level for Sansa and a Maximum Money for Customers. Both were scrapped because they were redundant most of the time and even counter-intuitive towards some decisions.
Some variables that I am thinking about adding are ones that track down Sansa's relationship with specific costumers (Right now there is a "renown" variable that tracks down the impression of her on customers in general, and causes money to grow in a curve (taking a dive and then going back up), so it affects the chances of success in all negotiations.
Regarding graphics, I was originally going to rely somewhat on Sprite Sex for some things (your coworkers having sex in the rooms next to yours on occasion), but MV's Sprites seem a bit too SD for that. What do you guys think? Next update I will probably try to draw two different CGs with two different styles, so you can help me pick the better one.
Regarding story, right now aSoIaF is causing issues down to the currency (prostitutes in Westeros are far too cheap in the books for Sansa to really manage to save up anything), not to mention that it ensures that I don't get combat involved into the game at all, so I've been having doubts about maybe switching to just Dragon Quest. What do you guys think? On one hand, it would allow me to go nuts on costumes and guest stars, as well as shoving combat into the game as well. On the other, I am not sure about combat would help the game at all or just distract it. After all, I still want it to be a prostitution simulator at the core.

Regarding the main plot, it is still largely undeveloped. Sansa wants to save money to "retire" somewhere. What obstacles and facilitators could I put there? A minor noble who falls in love with her would be beyond cringy. So far the only antagonizing character is the daughter of the Tavern Owner, who is there because I thought it would be funny if a commoner was disdainful to the fallen Sansa. And I was thinking that she could have a younger brother with a Crush on Sansa for sake of the /ss/, but I am not sure
In the books, Maidenpool is destroyed during the War of the Five Kings, but it is safe from that in this continuity
Other story elements I've been thinking about throwing in, but that affect the game negatively in one way or another:
Sansa was captured, raped and held captive by some outlaws for about a year before the Tavern Whore thing starts. This makes sense because it explains why she would rather whore herself than reveal she is not dead and go back to her family in this continuity. The con is that I am certain many players will be turned off by that level of darkness, and others by the fact the darkness occurred mostly off-camera.
If I go with the previous idea, I could have Sansa give birth to a baby before the story starts, which could be used as an interesting surprise for the player and a bittersweet twist for the end of the story, where we see Sansa reunited with her daughter/son (whose existence had been hinted before, but never quite seen). Of course, then I have to hide the kid somewhere, and there isn't really a place that makes sense in Westeros (other than MAYBE a Sept).
Lady is still alive in this continuity (plausible, given the backstory I wrote). Sansa can Warg into her during her dreams to... fight things? find items? The issue here is that there isn't really much of a reason to make the addition

They've retitled to Something Unlimited and removed references to it from their Patreon in favor of a wholly unique setting for their publicly promoted game. Away from Patreon, they've said that they plan on finishing Something Unlimited but due tor closer scrutiny from the rights holders they've moved the development talk to a third party site, I think it's Hongfire.

I would say it's a good sign that you're thinking big but working towards something small and reasonable.
As for your setting a goal of october, I think that's the wrong way of going about it. People have almost no ability to estimate how long or difficult something is until they become expert at it which can take years. Instead of setting a goal which you may or may not succeed at, just follow a system where you learn/do work/make progress on a daily basis.
This might seem nuanced, but the psychology of feeling good on a daily basis about following your system vs feeling bad that you have unforeseen obstacles and haven't yet reached your goal is a pretty big difference how well someone does in solo projects.

Anything can be an obstacle, a rival whore who steals her well off customers, a pimp who demands her money, tavern owner who raises her 'rent', expensive medicine to cure some illness, etc. The key to making them not frustrating is to allow some decision making in averting some negative situations but sometimes it's fine when there are no good choices.
