I'll admit I'm more in favor of Jin, and I thought I was the only one until recently in the past five years the amount of fanart for her skyrocketed, however I still always loved Mai and never wished her ill will.

Where to people get the idea that Azula has an unbreakable iron will? She's the most physiologically fragile character on the show. A control freak who can't handle it when things don't go her way.
Just loosing control of her pet minions was enough to unhinge her. The last time we see her on the show she's having a complete mental breakdown. The problem with training her as a slave would not be breaking her. It would be preventing her from breaking so badly she'd be useless.
