The 2011 anime is mostly really faithful to the manga, so I would start with that, but read the first chapter of the manga before or after you watch the first episode, as it has some important plot stuff the anime skips. Unless you prefer reading manga in general, go with that first. If you like the series enough to want more material, watch 1999 after you're done with 2011. And don't listen to the people who either violently defend or hate on 1999. Objectively, 2011 is much more faithful to the manga overall, so if that's something that's important to you, go with 2011.

If you don't want to read manga, go with 2011. It adapts the first 339 chapters faithfully and ends in a good place.
In order from best to worst, it's manga (get the good scans on nyaa) > 1999 > 2011.
I was glad I watched in order from worst to best though, because then none of them disappointed me. As far as battle shounen adaptions go, both anime series are far above average so all are good options.

The manga is probably the best bet but if you are going to watch any anime you might as well go for the 2011 mostly because it just covers more of the manga than 1999, 1999 was my first intro to Hunter X Hunter and it is great and in some ways superior to the 2011 but the 2011 version has so much more adapted and runs to within a short distance of where the manga is currently.
You could i suppose watch 1999 then switch to the relevant place in the manga or 2011 but that would probably be pretty jarring.
Oh and other people have said this but it bears repeating, if you do read the manga get the scans from nyaa.

Better start with the manga. If you enjoy the manga and want an average 1:1 anime adaptation, go with 2011.
If you want an adaptation that offers more than just copy pasting panels for storyboards, go with 99

Watching both all the way through. The 90s style lends itself better to the Yorkshin arc with many night scenes. I think you would be doing yourself a disservice by not watching it.

Are you fucking memeing on the OP? Togashi's hand was broken for this arc so the art is absolute shit. Just watch 2011 and continue with the manga when you finish it. 1999 has some good bits too. The Yorknew arc is pretty great in it. I'd still say to watch 2011 first and jump back to 99 if you're clamoring for more.

That is so fucking wrong. While 1999 added content without altering the manga's story. 2011 just removed parts of the manga entirely like the first time Kaito appears on THE FIRST chapter and later on it butchered the gourmet hunter exam.
The retard that directed 2011 had no idea what fucking directing means it is just a bad try to colour the manga and even failing at that.

Not the same anon, but i don't think 2011 is bad because of the exclusion of certain scenes. I think it is bad because a relatively inexperienced director+bad storyboarding fucked it up at nearly every turn. And thats saying nothing about the terrible color scheme or animation. 2011 felt like "paint by numbers" where not much focus was put into constructing scenes.
Manga then 99. 2011 afterwards if you're really starved for content.

Manga is the best choice.
1999 is less fatihful to the manga in depicting characters, but it's the better anime: better direction, better use of the ost, more interesting.
2011, exept for the first episode, is more faithful to the manga, but it's also a worst anime overall.
The direction is uninspired, simply coloring panels from the manga and adding speedlines and vomit inducing colors, worst use of the ost, which on its own would be pretty good but they use the wrong track at the wrong moment.
So, if you value the quality, 1999.
If you value faithfulness to the manga, chapter 1 of the manga, then 2011.
I'd recommend manga over 1999 over that abomination that's 2011
