Why DIDN'T they fail? It was a group of first time adventurers, they put their group together THAT day, they didn't make any plans, didn't do any training together, the magic users and monk only had school training, the swordsman didn't even have that and literally didn't know how to use his sword, they didn't have the right equipment, they were fighting the goblins on their turf, etc.
Hell the manga flat out explained why they failed. Since they didn't bring the right lighting, they passed up a tunnel in the dark, and they got flanked. There are multiple reasonable reasons why they failed. The author uses a lot of D&D jokes, so I'll use an analogy.
These kids thought they were on the first level of a videogame, but instead they were on a first adventure of a Pen and Paper RPG, with a very grumpy DM.

Okay /a/non, let me break out some /tg/ style D&D lore for you. Because this series is pure old school D&D and doesn't try to hide it. The "guild application sheet" is even a damned D&D character sheet. But I'm getting side tracked.
You know there are different genre rules for anime series that can totally change the outcome of the same actions? Like, in a Romcom a little slapstick violence is comedy, and in a drama it's domestic abuse. Or the differences between Super Robot vs Real Robot mecha series. D&D campaigns are the same way, with the game's Dungeon Master setting the genre rules for their game.
So imagine one of those genre axis. At one end, the PCs are Big Damned Heroes. They have plot armor, they're significantly stronger their their foes outside of major boss battles, and no one dies unless they throw up a bunch of death flags first. All sounds pretty familiar, right?
Goblin Slayer is not that. It's on the opposite end of that genre axis, where you're playing in Fantasy Fucking Vietnam. Dungeons are pitiless death traps, not treasure boxes waiting to pop open. The monsters are cunning and ruthless bastards who won't show you a second's mercy. Plot armor in nonexistent and death is sudden. Your heroic backstory and all those fancy abilities on your character sheet? They won't save you. You have to quiz the DM over every terrain feature and invent new ways to exploit every piece of equipment you have, because if you let your guard down for an instant you're going to die.
Not everyone likes to play that way. Some people love it. It's like the people who play vidya on Nightmare Hardcore where there's no restores and no extra lives.

You have to switch to a different rule set when having large numbers.
Otherwise, trust me, it gets cumbersome. In my last dungeon I ran, my players assaulted a keep that had 100 men garrisoning it. They fought againts a Lord who blew up the floor, and they fell into the Grand Arena, where 50 soldiers were sparring.
It becomes a slugfest when 50+ enemies attack even a higher level group.
It's so easy to die, it aint even funny. Because crits always hit, and people helping each other get +2, and flanking bonuses matter. Suddenly you're not so special, you're a guy on the floor being pinned down by 20 people, or you have a dozen holes in you.

It's a pure shock value intro to establish high stakes for the rest of the story. Think like all the horror movies that open on what you think is the protagonist and then NOPE they die before the opening credits. I remember Ga-Rei Zero did the same thing in the first episode.
Some people dislike shock value intros on principle. They think it's a cheap bait and switch. Other people enjoy them, because suddenly they can't predict everything just by being genre savvy and there's a real thrill of the unexpected again. So tastes differ.
