Wilhelm's wife doesn't appear during the expedition to kill the white whale.It's probably a badly spread spoiler, but during the fight, we only get a small chapter about Wilhelm himself and how he met Teresia. There's one part where he fights her in front of the previous king and defeats her to steal away her obligation of being the current Sword Master, but that was included in the past story,it didn't really happen when they were fighting the whale nor did that thing make her appear. It was stated the white whale only has 2 powers, with one being spreading the mist and freely fly through it and the other being emitting mist from its body, a mist that can erase a person's existence. Although Subaru isn't affected with this and he links it to his power of return by death, by saying both work similarly, because basically everytime he resets, he's the only one that remembers what happened and everyone else does not.

There's also more inconsistencies like how Crush and the squad leaders remembered each of their units had 15 members even if they didn't remember who was killed. This is supposed to be a measure to at least know the fact that they were losing members even if they had forgotten about who they lost, but it still doesn't make sense, because if the existence was erased, the world would overwrite the fact that there was ever 15 members per unit and accommodate it so that those units with less members had a perfectly reasonable reason as to why they started the fight with less than 15 persons per unit.
Because the white whale mist has already proven that it has the same compelling power as Subaru's returns by death, because when Rem got erased in one of the loops, Ram and every other member at the mansion had not only their memories but the world rewritten to change the events in which Rem was involved. They still happened, but Rem was never them, and even her room never existed in the first place.
TL;DR, the white whale shit still leaves some plot holes for some details.

That's largely debatable, because the white whale mist had already proven it can rewrite reality itself. So, if a unit who had 15 members loses one, the compelling force would make it so that given to some reasonable reason, that unit was always 14 members and everyone wouldn't notice the fact that one was missing.
If that wasn't the case, then Rem disheartening entirely from any of the events where she was involved and these events getting overwritten to a different thing but staying with the same result wouldn't make sense.
Although like I said, I think it's debatable. But it is also true they haven't given any explanation as to why Wilhelm still remembered his wife.

It's just stated the erasing mist is what does that. Subaru even describes how some soldiers just literally disappear when they get touched by the mist, and a second later no one remembers them at all.

That's still kind of hard to assume because Subaru(the author) went out of his way to state the white mist had the same nature as his returns by death power, because of how they could both manipulate reality. The cult has a slightly different scent. They seem to react to Subaru in a different way as he smells of "love". There's possibly a distinct difference but some similarities that even Rem was confused with, thus, the whale recognized the smell that killed its mommy after Subaru's scent really became apparent.

I know it sounds weird coming from something I stated, but let me deny that too, because it was Subaru's scent of the witch that made its made body drop down to earth when they were fighting, and as described by the author, the whale itself knew it was suicidal doing that because it could get killed by the expedition if he did, but regardless of that, Subaru still used himself as bait to make it fall to the ground, forgetting about its own life entirely because of the wrath it felt after smelling Subaru. Although Subaru had to increase his scent to do this, because at first the white whale would still prioritize its own life.
So that doesn't explain why the whale let him alive in one of the loops if the scent of the witch was that much irritating for it.

Thus, making the scent more recognizable or focusing enough on it, it can really make itself apparent that it is Satella's.

I don't know how long it takes for Satella's scent to slightly dissipate but the Hakugei has shown itself to have more intelligence than what it appears to have. It could have deemed Subaru as not Satella's because her scent was not strong enough to make a distinction between the cult members. When Subaru really made himself smell like Satella, I think the Hakugei really decided it is the killer of its mommy.

It was actually directly state he is just a beast with no intelligence several times by the author, even in one interlude where we read the story from the perspective of the white whale itself. It describes its only purpose is consume the world in mist, and that he was created for that purpose and nothing else. It was also explicitly stated the white whale did not attack anyone out of spite, but because they were in its way.
Wilhelm himself tells the white whale that even though he comprehends it is not an intelligent beast, he can't still forgive it.
