I thought it was a pretty good twist. At first you think that Appetite Devils are just some neat imagery that represents a Gourmet Hunter's powerful and intimidating nature, but then there are these hints here and there that there's more to them than it seems, like the time Toriko had a sort of mental conversation with his devil and made a deal with it. Then you find out what they really are, and suddenly it's like one of the hero's powers is completely different from what it seems, but in a way that makes perfect sense in retrospect.
It's a lot like what happened with Gourmet Cells. First, they're just this weird gimmick that's used to explain why Toriko and his friends are super strong. Then we find out they're what made the world the way it is, and suddenly some things make a lot more sense.
