Where FSN Illya grew up alone, betrayed, and under harsh training conditions, her childhood was taken from her due to having to train for the grail wars. FSN did show that she kept a small amount of her child-like innocence and kindness, however, where she showed affection towards Shirou and at the end of HF. Most of the time, though, in FSN, she was used as a means to an end. You also have to keep in mind that during the course of FSN she was 18 years old -- which is 18 years older than she is in Prisma.
In Prisma Illya is more innocent. This is because she didnt have to endure the harsh trials and tribulations that she went through in FSN. Here, she grew up with a family, didnt undergo training, wasn't motivated by revenge. Also, as mentioned earlier, shes 10 years old in this series - so shes not going to be as jaded due to the fact that shes still very sheltered. However, there are remnants of how FSN illya acted with regard to HF considering that she took a self-sacrificing position in turning into zwei-form.
In any case, Kuro is basically the embodiment of FSN Illya - at least in terms of how she acts.
