Shit, if you want bullet cutting, some people can do that in real life. In the game, nothing is going to happen to bullet speeds to allow for bullet cutting, so you're gonna have to have faster than bomb diggity reflexes and speed to block stuff.
With a single shot from say a pistol at a fair distance, if you can't block that then the sword was a really bad investment. start shooting busts or full auto, and the bullets are even harder to follow, let alone hit. Sure it's possible, but damn if it doesn't take more skill than it's worth.
Bullets deflecting bullets wouldn't work reliably, because the bullets move too fast, and the hitcircles are too big. If the bullets are big/fast enough, however, they could probably divert smaller ones.
Explosions are not only viable, but it actually happens in GGO.

Personally, I think the whole situation is a bit wonky, but this is my two cents. Heathbar had hit a slump. He had to fry his brain in order to advance VR tech to get STL and Medicuboid and shit, but once he did, the VR industry was boned, because nobody could succeed him. So, he took all the players captive in his game in order to sort through all the players, and by imposing a real risk of death on each, something in their head will click and fight or flight will start somewhere, so potential successors will naturally get the farthest ahead. Once a potential successor is identified, they get an extra skill to mark them better, and put them on Heathbar's level, because honestly, nobody's gonna get anywhere using normals. Once they show proficiency with their skill, they fight Heathbar, and he decides, based on their observations of intentional weakspots in his armor (like him not switching off immortality, or their reactions to godmode) and their skill in battle in general, whether they're good enough to succeed him. I believe Heathbar decided on Kiririn as soon as he had his monologue after the bossfight, and as he announced that he was the final boss, he was telling Kikuoka who he picked. The entire last battle was a stress test for Kiririn, to see how long he could last before he had to rely on the system, and perhaps a lesson for Kirito, so he would learn to be less reliant on it. "Look, your reliance on the system got the love of your life killed, and now it will get you killed, don't do that again." something along those lines. Of course, neither died, because for one, heathbar had to make his death convincing to the rest of the clearing group, so he revived Kirito for his finishing blow, and also because he wouldn't want to kill the protege he spent so much time watching. Before he died, he made sure Kikuoka would be in touch with Kirito for the next step of his mater plan.
That, or Cardinal lied and was supporting Kirito. Or both.

I only take peeks into what's going on in SAO due to boredom and the okayish character designs. Most of the characters aren't entirely shit, there was some merit/potential at the start, and would be fine if the over all writing/plot was better than lukewarm mediocre. Thus I see the series as 'I hope there will be hot doujinshi that cater to my fetishes'. This is where the bulk of series I take a look at end up these days.My filthy elitist editor friend is to blame. Damn you for making my raise my standards.

It looks like the saber eats the bullets, and I doubt that shrapnel from bullets would register as damage in the game. The thing about blocking the bullets with the sword is that Kirito was swinging his sword. In "reality" (by that I mean actually playing the game) people would just hold the sword in front of any vital areas, and once you can see the shooter, it becomes easier to work out what they're going to do. Especially if you turn sideways.

Under the real rules of physics, you don't have to worry about zombies staying active for any more than a week or so before the decay and rot is too extensive. Literally only the dumbest or least fit of society would die from a zombie outbreak.
