a quick google shows that monks are immune to diseases at level 5, immune to to poison at level 9 and immune to non-magical weapons at level 20. They can also get the deathblow and greater deathblow abilities past level 20 which kills anything below level 10 and 12, respectively. Throw in a few magic rings and enchanted armour, and you're not too far off from being immortal.
