Hiei was edgy but there was something amusing about his edginess. It never got annoying. Probably because he was competent but not too competent (there was that whole fucking-his-arm-up thing), he got some genuinely funny one-liners, and he was on the good side. Nothing like Sauske-level edgy.
And I'm saying this as someone who preferred Kurama as well. Hiei wasn't my favourite but I could see why he could be someone else's.
