She was trying to set the stage for Yukino to give him some treats too. It fucking killed her to say that, in the novel 8man says it sounded like Yui was being crushed to say it. I admit, I haven't read the LN, so of course for the LN at least, I can't say. But desu, I've tried reading online translations of two LNs I've watched the anime to up until now, and both were freaking HORRIBLE. And I think it isn't so much the translation, but more the writing style overall, which is freaking terrible. But with the term being 'light novel', I guess you can't expect very detailed scenes or complex phrase structure...
On topic: at least for the anime, it would be very surprising if Yui were actually the only girl with a romantic interest in Hachiman. There's just too many scenes with and for the other girls for that to be the case looking atz the anime only.
Whatever happens, either way I'm gonna have to wait for the next season to come out, if there ever will be one. Fingers crossed!

The personal experience stuff is specific to this series (I would argue Watari makes a very specific and exceptional use of the medium).
In general, I do think LNs are best read like plays, because most are written with an adaptation in mind. If the series is an SF story set in space, imagine the lines spoken by Spike or Gene Starwind, etc. The visuals aren't provided in the text, because you're supposed to imagine them yourself. It's not a great system in isolation (Hamlet is much better seen than read, even if it's damn good read), but it works wonders for making manga and anime.

He tried to be a dense harem protag, and everyone's "friend", because he wanted to maintain the "real" relationships he started to form (he was woried romance would break the club up)
however as the season went on and he become more and more fake he started to enjoy spending time with Iroha because he didn't have to be fake with her and isolate himself from the club because he could tell it wasn't working. The friendships had fractured and he wasn't getting back what he had lost.
So when that arc ended he confronted both Yui and Yukino and tried to explain what he wanted. He wanted "genuine" relationships with others. He didn't want this fake bullshit that hayato and the others had. It wasn't about wanting a "real" girlfriend, it was simply about a real friend, real human companionship. not that fake bullshit most high school cliques are about.
But he doesn't know how to do it anymore. because it means being honest about feelings. and he's scared to be honest about his feelings or even to hear the honest feelings of others. So that is why he gives his genuine speech then promptly returns to being hayato dellux. It doesn't work and ends up in that heart to heart at the end of season 2. Where he's recognised his faults and realizes it's not all about him, it's about them too.
the end of season 2 is supposed to be a turning point.

I never thought the infirmary scene was where Yukino found out she likes Hachiman. Supposedly among the Nips it is when she decides to go for him, but I haven't not seen the argument for that. It's just a romantic moment that is special to her. She already knew she liked him before. She knew at least as far as back as "Help me someday" and buying the photo of the two of them.
It is certainly the moment when Yui realizes Yukino likes him. And it fulfills basically the same role in ANOTHER except in reverse.

One issue I have with ANOTHER is that people imply that Yui knows that Yukino swallowed her feelings. Based on her actions vol 11 I don't think Yui would walk all over Yukino just to get at 8man.

But you can't say Yui understands Yukino in ANOTHER as well as she does by the end of vol 11. She is missing all of vol 11 where Yukino's problems become obvious and seemingly dire.
So I don't think you can say Yui is aware of how hurtful to Yukino it is to bury her feelings. I think one of the points in ANOTHER (like the series as a whole) is that you can unintentionally hurt people by not understanding them. Which is why 'genuine' means so much in the story.

There's a difference between two girls going for a guy and one has to win versus Yukino's deep rooted issues with self and pursuing what she wants. Yui sees it only in terms of the former: it's unfair but loves make it necessary. She has no understanding of the latter in ANOTHER.

Yes you are right. But she was attempting to pry Yukino's feelings out earlier in the date and early in the series she is preoccupied with being fair. But as her character song says:
