So in relation to the anime and light novels, where does the light novels pick up where the anime ended? Also why is this one of the best stories to ever come out of Japan?

The anime depicts the events of novels 1, 2, 3, and 5 in that order. 4 is worth reading; 6 and the novels after it are not worth reading. They are that bad.
The novels ended at volume 5 but skipped vol 4, so you should probably read it.

Oh come on. Maybe half the later novels are pretty good. Not quite as dynamic as the first few but they're pretty good. The ones with Eve and the last two are great.

Several of the later novels don't have much in the way of meaningful drama or character development. They're extremely slice-of-life to a boring degree. "Horo and Lawrence went to Town X. They solved someone's little problem. Lawrence got teased a lot. The End." On a larger scale, throughout the series Lawrence is afflicted with Japanese Harem Protagonist levels of romantic denseness.

Most of them. The Side Colors books are pretty terrible other than the chapter about Nora. The most boring main story book also is important to the story unfortunately.
I'd guess out of the last 12 books maybe half of them are really good. The two Eve books, the two sheep books, and the three last ones are must reads.
How long does it take you guys to read a volume?
I've had all 17 volumes sitting on my shelf since the 17th came out a little while ago.

Depends on how interested I am, I remember wiping out the first 8 volumes in one week, took a month and a half to reach volume 13, then a couple days to finish to the end. In the middle the volumes take a dip but I still enjoyed them.
