I'm heading to Japan for vacation in two weeks and trying to increase my study time whenever I find the time.
Currently I can only reliably count objects using the generic つ. Would that be enough to make myself understood, even if it makes me seem like a moron? I'd rather focus on learning other things in those two weeks, than learning the various forms of counting objects.

it's different from other "X_Y" "Y, and not X" in that it doesn't imply that the lack of X is a reason for Y. it's contrasting the two instead. for example, "起きなくて遅いんだ" implies that the two parts are somehow connected, but ずに is providing contrast/concession instead. there's a common pattern in languages where archaic-seeming adverbial conjunctions are less literal than modern-seeming ones.
"I left school, be it not summer" "I left school, but it wasn't summer" "I left school, though it wasn't because of summer coming" "Even though it wasn't vacation I had to leave school" the most appropriate interpretation depends on context.

The A Dictionary of Japanese Grammar series. We have an Anki deck covering every single main entry.

The DoJG Anki deck is one of the worst things ever made.
Grammar should never be done through Anki - unlike vocab, it's too complex and context-reliant to be squeezed onto flashcards, so you either have these enormous cards which are awful for the quick recollection that Anki is designed for, or cards which miss a lot of the depth and subtlety required to actually understand the grammar point in the wild. Consulting DoJG is good and useful, but you should learn grammar from reading. Attempting to do it through Anki will only cripple your progress.

I disagree, sure it shouldn't be your only exposure to grammar, but it's nice to have some reminders since there are some fairly similar grammar elements there. It's only 6-700 cards, so it takes very little effort to do that deck to maintain your grammar knowledge, so you don't mix up for example ～として and ～にしては.
I read the DOJG books themselves and then downloaded the deck, and those few hundred cards only take a few dozen reps once a week to maintain all that knowledge.

The idea that example sentences on flashcards are somehow comparable to actually reading real Japanese media is laughable. Example sentences have their place, but they are not in any way a substitute for actual reading, which should be the heart and soul of your Japanese learning.

Anki should not be used for overly large cards, it goes against the principle of flashcards which is training yourself to achieve quick, instant recognition. Vocab cards work because you can usually (although not always) have a single English word which corresponds with the Japanese word, eg 猫 = cat. This doesn't work with grammar, and you are actually hurting your understanding if you attempt to do so.

Not long. You can even use (and should use) longer intervals than your vocab deck, since grammar is harder to forget. After 2 reps they already went to 1 month+ intervals. I capped it at 1 year, and half of the cards are already there.

You don't have feedback during reading if you got it right or not, that's the point. It's very easy to mistranslate something without even realizing it. So no, reading cannot really replace these occasional reminders.

What's the deal with adding demonstrative pronouns (この、その etc) to pronouns (彼、俺、私 etc)? I see it a lot, particularly when a speaker is referencing him/herself as the subject of a sentence, but I don't really get it. Is there a DOJG entry?

That's because DoJG only necessarily covers things that need explanation for how they're used. It covers the equivalents of "as it were" and "just because X doesn't mean Y" rather than stuff like "as to" or "for what it's worth". Sure, it'll cover things in the latter kind when there's interesting stuff to say about them, but book space is limited, so things that can be analyzed through more-general grammar rules is usually left out.

That's because you're focusing on your mistakes, rather than on your correct answers.
Suppose you go from 90% accuracy to 80% accuracy by switching from 10 to 20.
That'll be going from 90% of 10 (9 cards) to 80% of 20 (16 cards) in the same amount of time.
It brings more reviews, but if you've got the time to spare, you can do it, your head will adapt in no time.

I don't know whether what I'm doing is actually useful, to be honest, I just do it.
It helps practicing writing and reinforcing stroke order, but I wouldn't say it has helped me that much with remembering the kanji themselves.
If I had to write them from memory, I'd probably fail most of the times, I write as I review, before showing answer.
But once I memorize a kanji, it's pretty straight-forward writing it, since it already feels natural to my hands.

It means what it fucking means: reading sentences and looking up patterns from manga, etc. is no fucking different than reading example sentences from a grammar guide and using those to take into account the explanations in order to understand what it means and how it is generally used. You are referring to connotative usage while ignoring detonated descriptions. This is basically the foundation of a strawman argument.
There is a vast difference between "learning grammar" and becoming intimately familiar with the range of connotative usages and contexts the particular structure exists within. It takes YEARS of massive input to build up this intuition.
