There is one thing I don't understand.
Hisoka was keeping his severed puppet head both as a weapon and as a notification to see if Gallery Fake would be disabled at any point. Since the head never disappeared, he was assuming Chrollo still had GF on a bookmark. Instead, now he knows that all the copies could be marked with Sun and Moon to prevent them from disappearing when GF is deactivated.
What I don't get is, S&M requires two hands to be used as far as we know. GF also requires two hands. So even if you created a copy and bookmarked GF, it shouldn't be possible to apply S&M on the copy because you wouldn't have two hands available anymore.

I don't know. Hisoka can only fully understand the situation, if he knows these beforehand. If Chrollo had to resort to something as cheap as keeping his ability a secret and gain strategic advantage from that, Hisoka wouldn't be as calm and collected, and ultimately wouldn't be at his best in this fight. Chrollo wants to fight him in his full potential to test the extent of the Bungee gum ability that he wants to steal.
