Roshi drank an elixir of immortality, and Baba has enough magic knowledge to easily make herself immortal. There's also the immortal Phoenix and the Dragon Balls, so there's plenty of ways to become immortal.
All the other characters age normally, including Bulma, so Bulma's parents are probably immortal somehow. Either that or Toriyama doesn't really care about stuff written more than a decade after the manga ended.
