At first it was a good idea though. The difference in his art style going from Harem Time to Shokugeki was night and day, he leveled up at least 3 times over.
The problem now is that after his skills have been cultivated, it's just wasted because the series hasn't been axed and turned into a long success, and we will no longer know if he will ever do porn again.
It's a different case than say Murata, who not only never did hentai, but didn't really get technically better at drawing only had a lot more time to spend on drawing instead of being cramped on a weekly basis which isn't to his liking.

So why would they give up on that idea the moment they started working on her personality? The only thing unique about her is her design as a main character. If you're referring to the sort of gap moe of her design and personality then it's just a boring mix. They would have achieved the same thing by going with the delinquent personality type, or anything that obviously wasn't the generic waifu-type personality that we usually see in animes and mangas revolving around schoolgirls as their main focus.
The show would have been much more interesting too.

Meat is disgusting. I'm usually a fan of tomboys, tanned girls, or both rolled into one, but her words and actions make her a thoroughly unattractive girl.
When you have a big attitude but no power to back it up, you are a designated jobber who deserves to get your shit pushed in. Meat fits that image to the T. Her backstory was supposed to make her more sympathetic, but in the end Souma's encouragement and kindness only made her more obnoxious. She went from a tryhard tool fanservice character to a tryhard obligatory brown haremette.
She brings absolutely nothing to the table and her appearances could be substituted by better characters; in fact the screentime wasted on her could have been allocated to develop the Polar Star girls. Meat is a mess - a big fat mess.
Meat was a mistake. If her hair was dark, or she wore the regular uniform, she would be so much better. It is unfathomable why her ordinary "clothes" are so revealing. We are led to believe that she dresses so revealingly because she's a "badass" who can take the hot oil popping out of the pan. Great. Who the fuck cares. It doesn't win her any points in cooking skill or fashion sense.
And wow, she can cook meat well. Good for her. As if none of the other characters could do that. Her gimmick is so weak and inconsequential that her only victory to date is over Mea, a freshly introduced fodder villainess who incidentally resembles Meat in character - a big-mouthed tryhard tool who got rekt, and rekt badly.

She brings more to the table than anyone else, especially appearance. The screentime of her might be the high point of the show. She's sacred meat.
Meat is the best decision of the show. If her hair was dark or if she wore the regular uniform, she would be like everyone else. To make her recognizeable was a great decision. She's not just badass but also not afraid to hide her sexiness. The nips can't even compare to her body and she knows it. It's great fashion sense and it shows she can cook without spilling a drop as her body stays clean at all times.
She can cook an essential part of any meal while which requires some delicacy to do perfectly. Her feature is important and she deserves more victories.

She's possibly the most lazily written reoccurring character in the series. She's a one-dimensional tsundere without the sense of style or massive dere potential (both of which went to Erina) that often makes the archetype appealing.
It's a shame, because I would completely agree that she's hot as fuck. I would love it if there were a Nikumi arc that did give her best girl status (which would likely involve a sudden and drastic character change).
