You overestimate kids, I feel kids will usually take the route that requires less thought when given the choice.
You have to take into account that Doremi didn't really have any direct competitors for the little girl demographic back during it's original air dates, most kids shows airing at the same time were either for little boys or gender neutral.

It REALLY varies sadly.
Dubs from the 80's like Maison Ikkoku, City Hunter, Aishite Knight etc are okay/good, but are censored, dialogue too, as so they don't take place in japan.With stuff like crêpes instead of okonomiyaki, or apple juice instead of alcohol. Picked these above example because they're especially notorious for it, and pretty much every french person above 32 knows about it. Or 20+ people like me who watched these show thanks to siblings. Younger ones also exist as there's always rebroadcasts.
Then there's cases like Hokuto no Ken's dub which is intentionaly translated relatively well, but with tons of stupid puns and jokes because iirc the actors were told to do whatever they wanted, to counterbalance it being "violent" . tldr it's like an abridged series.
Then starting 2000, dubs heavily vary in quality. Globally, kids shows are dubbed well and everything else isn't. Regardless of genre.
CCS's dub was okay. Pokemon's dub has always been good since it started here in 2000. Meanwhile, from Naruto to Initial D to Fruits Basket to KurokonoBasket, the dubs are absolutely horrible. The translations are always fine, and nothing is censored now, but the acting is always cringy, ALWAYS monotone, lacking in emotion, shouting and life. A lot of times, names pronunciations are incorrect too.
One french voice actor said one of the biggest reason why almost every dub is bad is because they dub without footage, I forgot the reason why, saw that interview years ago.
I rarely watch TV now, but latest bad dub I saw is Accel World, while randomly stumbling on an episode some weeks ago.
There's some exceptions, like Excel Saga's dub which isn't that good, but the woman who did Excel managed to do it very close to the jp version in terms of fast.
I don't know if it's the case anymore, but another reason why they're so bad is because of lack of different french va.
