Yeah kinda, more often than not they're either faily well adjusted at first then the get angrier or ceazy later on.
Kamille was pretty much angry all the time, it was pretty funny actually.
Judau was pretty normal aside from those times when he got really pissed.
Setsuna and Heero were like light variants of Mika.
Domon was hotblooded as hell.
Lauran was pretty well adjusted throughout.
Garrod was a badass.
Shin was pretty similiar to Kamille
Kira was, Kira.
Amuro was kinda whiny at first but, Bright Noa brand correction slaps put him in order eventually.

Only in related universe ones, like the UC series. You'll see older suit designs in Unicorn because Unicorn is UC and tied in with all the other UC series. Standalones like IBO, Wing, X, G, etc etc you don't see other suits from in each other. Turn-A is bizarre because it borrowed from all the Gundam series.

You might want to watch MSG, give a look over at Zeta and ZZ, and CCA, just so you know the state of things and how they got that way. You get a good amount of narration and exposition throughout Unicorn, but it's bare minimum if you're looking to understand why the Unicorn project even needed to happen and what the big deal about Laplace's Box is, because it all ties back to what led to the One Year War. Also has a lot to do with why Mineva's so important and who the shit she is.
Alternatively, if you don't want to sit through all of that, find the Gundam Official Timeline and just read up on the events.

If you only want to watch unicorn, there's absolutely no need to hassle yourself watching past UC shows. UC Gundams can totally be enjoyed as stand alone shows.
Just read some synopsis, get an overall knowledge on the lore and you'll be fine.
