UBW animation drops off substantially when it gets to the end of its seasons. If you do not compare it to the VN it is fine, but it misses some of the major points of character development with missing internal monologue that explains some key elements about the UBW route. You can barely get a basic understand of the UBW route from watching the anime as there is plenty of other pieces left out for other reasons.

It's probably as good as anime adaptations can go, but it just isn't the same as the VN.
I guess might've been too long since I've read the VN and thus I misattributed routes a lot, but when I watched the series I felt like it missed so much thrill of what made the VN enjoyable.
Saber mana issues largely unexplained, Saber training sessions barely mentioned. Daily routies of Shirou weren't as rooted. Locations and plot points slightly altered. But the main problem is impossibility of incorporating the power levels into the anime. Also obviously no choices/bad ends. Trying too hard to tie it with Fate/Zero. Lack of Shirou monologues, Shirou's huge boner for swords.
For me the most thrilling part of playing F/SN was just going to the Servant tabs, comparing their abilities and figuring out what is actually happening and what should happen in the future, getting to know the characters and world and what they have at their disposal. In the anime, this aspect is completely lacking and you're just getting streamlined version of the whole VN.
It didn't really felt like Fate/Stay Night, but more like a summary of Unlimited Blade Works and while it has tried to be as faithful to the original and tried to includes as many momerable and defining scenes as close to the original, it just didn't work the same, because they couldn't delve into the mundane parts.
Hell, Shirou grieving for Ilya seemed completely out of the place, since he's only met her twice only and last time he did she just wanted to kill him. While anime gave us reasons to grieve for Ilya, it missed the narration of us playing as Shirou and the whole story being a story of Shirou who met Ilya at market and despite going in with wrong foot first, Ilya and Shirou came together to at least some degree though their interactions.
I guess I'll have to wait for Heaven's Feel movies, but I am kind of sad for people who actually won't experience F/SN as I did. And I don't mean it in some condescending way.

If you're refering to some "against all odds" kind of scenarios then that's a given and it's part of the style of genre, they're supposed to overcome all hardships in incredible fashion where everything seems to be stacked against them, but I'm sure it has that many, if any, glaring inconsistencies.

Kaleidoscope and True Magic were hinted/referenced numerous times before. The sword was properly introduced and explained, but I guess you can call that an asspull just for not appearing in previous routes?
