'99 has slow start but is better by far except for a few shitty filler episodes. At the very least watch the '99 York New arc, it's fucking perfection. I watched 2011 first but it always felt like it was a little kid's show (like elementary school as opposed to the preteen audience of the manga) even when it got dark and violent until around the middle of the Chimera Ant arc when it felt like someone on the staff finally started giving a shit.

If you want the most straightforward anime experience, 2011 is fine and you can save 99 for later if you like it. But you can pick up Greed Island from 2011 if you start with 99.

If you read the old scans like a retard then no, it's not the full experience. Luckily the hq redrawn scans are on nyaa and people can read the best version of the series.
This is what I recommend to people.
Watch the 1999 version up until after York Shin.
When it gets into Greed Island, switch to the 2011 version.
1999 just had a better atmosphere and overall feel. Plus the fight scenes felt a lot more gritty.

It's not though because in the 1999 version the OAV series pretty much start at the beginning of Greed Island and the animation does a dramatic shift anyways.
2011 did Greed Island better than the original OAV's, so it's a good place to start as you'll be getting a change in animation regardless.
I'll agree with you though that everyone should read the manga first regardless.

Anyone here could write a "better" analysis if only because Creamer doesn't introduce any interesting interpretations of the arc and only spells out the basic themes. I've seen plenty of posts from anons who do a better job at discussing and debating the characters' motivations and psychologies while offering new insights.

I watched the 2011 series first since I had heard complaints concerning the handling of characters in the 99 series, and I liked it. Afterwards, I watched the 99 series to see what was different and ended up really liking it for multiple factors including the filler. If I had to recommend watching just one, though, I'd say watch the first episode of the '99 series to get why Gon set out on his journey and then watch the 2011 series.
99 only goes up halfway into yn arc.
2011 covers all of the manga save for minute details.
2011 has better choreography in fights, but 99's animation is a little more fluid. If I were you I would watch the first episode of 99 because there is a character that is important that is relevant to later on in 2011, and just watch 2011 after that.
99 is only good for atmosphere and old anime nostalgia.

Personally I'd say they're both just as good as each other. I'd watch the 2011 one though, simply because Hunter X Hunter is apparently starting up again and the 2011 version is closest towards the manga. So if you enjoy it, you can continue to read the manga after.
