Most of them are written by different people. Nasu supervises everything, but he only personally wrote Fate/Stay Night and its sequel, Hollow Ataraxia. The setup is good enough to produce a lot of different stories with totally different casts of characters, so a bunch of writers feel like trying their hand at it. (This is, at least, the case with Apocrypha, the one in the OP image, if we are to believe the author's afterword to the first book.)

I can read Japanese. I got all five books as a present last Christmas and I've been steadily working my way through since.
Apocrypha has a lot of really good moments so far, but it's also got serious pacing issues (like Atlanta not getting characterization until 30 pages before it becomes important) and is seriously lacking a thematic center so far (although it looks like it's ultimately aiming to be about Sieg coming to terms with the world and humanity generally, with Jeanne and Shirou representing opposing viewpoints). The arc with Jack was probably the most consistently good part so far. That and the fight scenes being better written than FSN or Zero (clearer and without implausibly-long dialogue).
Strange Fake is definitely more on point structurally, with no wasted scenes and every character reflecting back on the central real/fake dichotomy, but it's still early in its run, so who knows how it'll pan out in the end.

As I said, I'm only halfway through book four, so I can't give you the ending or anything, but here's what I've read of book four so far (highly compressed):
Jack covers the whole town in mist. Reika, disguised as a random passerby, uses the opportunity to shoot Sieg point-blank three times in the heart while Jeanne is running the other direction to help a kid. Sieg nearly dies but survives thanks to Siegfried's heart and destroying the bullets with magic. Reika retreats.
Jack uses children possessed by the ghosts she's made of to attack Jeanne, distracting her while Jack uses her second NP, Maria the Ripper, which instantly kills a woman alone in the fog at night. But Maria the Ripper is technically a kind of curse, so Jeanne's flag let's her block most of it and only suffer some damage. Jack then uses the children as hostages while she fights Jeanne and Sieg, trying to isolate them and kill Sieg, who she figures must be Jeanne's Master.
She almost pulls it off, but gets shot buy Chiron at the last minute and takes a big hit from Jeanne on top of that. Reika saves her with a command seal and tries to carry her to safety, but Atlanta, who was supposed to just observe but is pissed off because Jack involved children and Atlanta's whole deal is that she wants to protect children because she was abandoned as a baby, goes after them. Reika shields Jack and takes and arrow through the chest, using her last to command seals for Jack to be okay even without her there. Jack freezes up when Reika dies, though, and Atlanta shoots her through the heart too. Except, instead of dying, Jack explodes into a cloud of angry ghosts and drags Atlanta, Sieg, and Jeanne into her mental landscape.
Atlanta is totally unable to deal with the horrors of industrial revolution Whitechapel, which is awful as a result of an impersonal social system rather than because of a definitely evil being hurting people, and with all the ghost children she can't save. (continued)

The curses start to eat into Atlanta.
Sieg, who has never really interacted with ordinary people, has his optimistic view of the world as inherently good and beautiful shaken to the core, and basically freezes up in the fetal position.
Jeanne, in contrast, declares that she has absolutely no sympathy for the ghost children, who can no longer be saved because they're permanently attached to the "Jack the Ripper" identity, and starts to purify them out of existence completely so that they can never even be summoned again. Atlanta tries to stop her, saying that if Jeanne really is a holy woman she should be able to do something to help them. Jeanne says that she's never thought of herself as holy, whatever anyone else said, because she participated in battles and chose to save her countrymen at the expense of the lives of their enemies. Jeanne finishes her prayer, and wipes the ghost children out of existence so that they that Jack the Ripper can never be summoned again.
Back in reality, the fog disappears and the town returns to normal. Atlanta swears to kill Jeanne for not saving the ghost children, but retreats when Chiron shows up. Sieg is still badly shaken by what he saw, and asks Jeanne to refute it and tell him that people are inherently good and the world is beautiful. She refuses and asks him to try to love the world anyway.

Back at the Hanging Gardens, Atlanta reports to Shirou and Semiramis, then goes off to her room to brood. She's still angry at Jeanne and she's chosen to leave the curse from the ghost children on her arm.
Shakespeare stops her in the hallway and does his usually banter thing. Atlanta gets angry but is taken off guard when Shakespeare asks her about the vision she saw, and eventually she stalks off. Achilles comes up and Shakespeare asks him whether he wants the story of his life to be a tragedy or a comedy. They banter for a bit, and in the end Achilles says he wants it to be a comedy where everyone has a big laugh at how stupid his death was. He asks Shakespeare what he's been working on in his study, but Shakespeare won't say.
Back in his study, Shakespeare looks over a big book he's writing in. It has a section for everyone in the war. He's also got a little notebook where he's started writing Sieg's story, but he's annoyed because Sieg just doesn't seem to fit into the grand narrative as he sees it.
Karna is watching over the five original masters from the association, who are all drugged up and hallucinating in a side room. Semiramis tries to get him to give it up and just let her kill them and be done with it, but Karna refuses because he still feels obligated to the mage who summoned him. He basically tells Semiramis that she's tsundere for Shirou, and she storms off. Karna reflects that this will distract her enough to keep the mages safe until the war is over.
Semiramis sits on her throne trying to convince herself that she can betray Shirou any time she wants to, but finds she just can't picture it.
Back at the castle, Fiore finally has her planes, but they just don't have a good enough plan for dealing with the Gardens' defenses. Astolfo remembers that he can only remember the name of his book NP, which dispels all magic, on the night of a new moon. (continued)

The next new moon is in five days, but that would mean letting the garden, with the grail on board, leave Romania. If that happens, Yggdmillenia can't recover the grail even if they win.
Fiore sends everyone else out of the room and thinks it over with her brother. She eventually decides to abandon her life as a mage because she just can't make herself feel okay with the amorality it requires, and chooses to wait five days to make their attack. Her brother will take over her responsibilities as a mage, but they're both going to participate in the attack on the gardens.
On the roof, Chiron reflects on how little the world has really changed since he was alive. Sieg asks him for advice about the visions he saw fighting Jack, and Chiron tells him that he has to think and come to his own conclusions.
Fiore comes up as Sieg leaves and tells Chiron her decision. Chiron is glad because he sensed she was too nice a person to be the head of Yggmillenia. They take turns talking about how glad they are to have ended up as a team, and Chiron promises to protect her no matter what.
Sieg and Astolfo go on to Bucharest to ready the safe house there for everyone when they come to get the planes. Astolfo constantly causes trouble and breaks things. When Sieg asks him how he can be so positive about people, Astolfo says that he loves all the possibilities ordinary people represent.
Astolpho suddenly senses another Servant and races off, and they run into Mordred chilling in an alley.
I'm in the middle of reading the next scene now (it's another Shishigou flashback), so that's all I can tell you, except that I accidentally read one bit ahead, so I know Jeanne is going to find out Astolfo is a guy by walking in on him in the shower in like 40 pages.

I like Shirou as a villain, but I feel like the ending of book 2 should have been the end of book three instead, so that the part with just him as the big bad would be shorter. Shirou stealing the grail would feel like a bigger deal if there'd been more back and forth first, and Darnic feels like way too much of a nonentity prior to his big moments at the end. Plus, I really think they could have done more with the tension between Jeanne and Vlad. Sieg needed the whole subplot with the homunculi to be longer and more involved so he'd have something actually meaningful to take up his scenes and he could have a more pressing and immediate conflict to deal with. Alternatively, he could have been less prominent so that he could actually be the dark horse he is to everyone in the story.
Astolfo needed the plot with Celenike to not be suddenly and meaninglessly resolved by Mordred jumping in and then immediately exiting the scene. He could have had actual obstacles to struggle with and had to overcome them in some way.
Basically, the core problem with both of them is that they spend a huge part of their arcs on events that are only relevant to Sieg's not-especially-interesting personal growth, but they still get a disproportionate number of pages devoted to them.
