For westerns, the Samurai genre is the best you'll get, as the Western genre itself is an evolution of samurai films, so I guess you could watch the Yojimbo anime. If you're ok with live actions, then Nikkatsu Noir films are great Yakuza and samurai films that have clear influences on the western genre.

Sci-fi that doesn't focus on giant robots or a stand-in for giant robots. If it must be mecha, at least make it something like Patlabor that treats them like machines with limited use and applications rather than heroic extensions of your protagonists. Animation allows you to seamlessly blend elements in ways that live-action cannot. Anime does not leverage this like it could, and with the shit to using CG for some elements it completely abandons this natural advantage.
