Top class would be the Lodoss Wars OVA and Escaflowne, as other fine Anons have already pointed out. Add Macross Plus to that.
Memorably fun would be the various El Hazards, Vandread, Outlaw Star, Macross 7, Dual! Parallel Trouble Adventure, BGC 2040.

There are many 90s anime to pick from. I'd say that Nadesico is among my favorites in the Space Opera genre of that decade, though.
