It's mostly a reaction to people acting like it's objectively superior to all other scores.
It's not without its faults though. The main problem is inconsistency in more ways the one. The quality of the background tracks ranges from terrible to great on regular basis. The tracks are very badly melded together and break up the mood of a scene by playing an ominous tune one moment and something else entirely the next. The audio levels are really bad sometimes, with the supposed "background track" overpowering dialogue to the point where you can hardly even tell what the characters are saying.
That said, it's not as bad as the haters make it seem. I did grow up with the Faulconer tracks and, as you said, they are wonderful at setting the atmosphere for scenes, but it's also jarringly bad at points.

Also Kai itself is a huge hackjob of the old series...many fights don't flow well because of how awkwardly edited it is
And the new frames of animation they insert once in awhile look like they've been done in MSPaint and simply look absolutely horrid
And also the Majin Buu saga which looked the worst had a horrible green filter over it and god knows what...also was cropped widescreen on Blu-ray(unlike Beggining to Cell Saga which was the original 4:3 ratio on Blu-ray)
The only thing it's got going for it is the better english dub(in terms of scripting at least)
Overall the original japanese version of Z is still the best way to watch it(best home release being the Dragon Boxes)

The only reason I prefer Jap kai of original Jap (at least from saiyan to cell saga) is because I don't have to watch whole episodes of people powering up anymore. However, whenever it gets towards the buu saga I prefer the original Jap version because I felt like the 2014 kai fucked up the pacing. Either way though both are a lot better than the english one (which I grew up with). I can really only think of like three good falconer scores.
