As an anime? Given the sheer volume and variety of his works, you could go a number of different directions.
Start with Elric - introduction and setting the "dark fantasy" tone.
Nomad of the Time Streams for that steampunk flavor.
Kane of Old Mars if you want more old-school sci-fi.
To REALLY mess with people, the Dancers at/Legends of the End of Time would be great.
Corum and Hawkmoon seem almost to be two birds of a feather IIRC; they're closer to standard fantasy genre, I think.
