The anime cuts it out, but essentially when Lawrence is returning with Holo and the Shepherdess through the forest Holo notices they're being followed, and the Shepherdess' sheep dog also freaks out. It's wolves.
They run through the night, but it doesn't matter, the wolves are just waiting them out. So Holo goes full full form and runs into the forest, only to return at dawn and informs Lawrence (but not the Shepherdess) that she had to "appease" the Wolf's pack leader.

If anyone wants to read the LNs, the anime ends at LN 5, so you should start at LN 6. Here's a general idea of what happens.
V5. Anime ends, Eve Bolan swindles Lawrence and runs down river with the furs. Lawrence uses nearly all of his remaining fortune to "buy" Holo back from the trading house that probably would have sold Holo into sex slavery had Lawrence been unable to pay.
V6. Shitty filler volume. A cockblock named Col is introduced whose only goal is to stop Lawrence from fucking Holo. Not even kidding.
V7. Shitty filler volume. Talks about side characters and what they're doing now.
V8. (Town of Strife I) Lawrence arrives down river at a new town, and manages to beat Eve. He intends to inform the town that Eve's goods are stolen (so no one buys them), but there's a larger problem. A "mythical" creature has been caught a brought to the town. Merchants want to buy (and sell) it for profit, the Church wants to kill it (heresy). Lawrence, Holo, and Eve gets caught up in it.Eve is nearly killed.
V9. (Town of Strike II) continuation of the previous volume.
V10. Shitty filler volume. Lawrence and Holo get sidetracked over some shitty bones.
V11. Shitty filler volume. More side characters and what they're doing now.
V12-14: Shitty filler volumes. Lawrence gets cocked blocked for 600 pages. Nothing happens. More bones, also witches, but not cute witches.
V15-17: The final arc. Lawrence has sex with Holo, they marry, the end.

Considering the most important arc of the series is the character development I don't think that's necessarily a bad thing. One of the few stories I've read that I looked forwards to the character dialogue alone.
That being said V6 is definitely the worst. It introduces the cockblock king, only foreshadows things that show up in the next volumes, and invents some arbitrary reason for Holo to be mad at Lawrence purely to create conflict because nothing else happens
