Rebuild Rei's less hesitant and deliberate. Where before if she couldn't express something she'd ruminate in uncomfortable silence until it was a monologue or avoid things she'd decided weren't for her, now she's describing feelings with baby talk and she immediately jumps on her first idea and starts cooking like she just wasn't aware before. If you really need more, go for it, but you will probably be disappointed on some level or another.
It was originally intended to be a replacement for NGE that removes some of the more obtuse elements of the story (maybe) but it's turned into something else. It's also not finished yet and we are waiting on a fourth movie that will hopefully come out within the lifetimes of most of the anons here, so if you hate incomplete stories there's another thing to consider.

The first film is basically just the first 6 episodes with new animation. Oftentimes the shot structure is nearly identical too. The second film diverges from NGE's plot significantly and the third is completely different. It's not a huge investment of time or anything, so don't be daunted on that regard.

EVA 3.0/3.33 was controversial for this and a few other reasons. Still worth a watch though if you like the series.
Supposedly EVA 4.0 would come out this December, but given the lack of advertising it's probably delayed.
