See, the thing people forget about Toriyama is that he loves subverting fan expectation and going out of his way to give the vocal-minority the opposite of what they want.

Piccolo, who got one-shotted by some random underling and who had trouble fighting the rest of Frieza's army. Gohan meanwhile 1-shot the guy who beat Piccolo and easily had the power to kill ALL the henchmen, but chose to do everything non-lethally. Gohan got instant KO'ed by frieza, but literally anyone not goku or vegeta would have or just flat out died.
and he's a saiyan, so he can actually get to goku and vegeta's levels with only a little amount of time. Piccolo is basically fucked power-wise unless he gets another fusion chance.

From a character-development stance, I'd like to think that Vegeta watching Kid Buu murder an unconscious Piccolo, Gohan, Goten and Trunks, on top of nuking what's left of Earth stuck with him, so he doesn't want to train Trunks to the level he and Goku are at.
Since he's the guy who stated that Earth needs to take care of its own problems and he would rather deal with future challenges himself, instead of deferring to the next generation.
This is what I like to think is going on in Vegeta's head, but the reality is that he's too busy chasing after Goku, who's chasing after Beerus and Whis to care about nurturing the kid's Super Saiyan potential.
