Sure they can. In fact, children oriented material is written only or mostly in kana since they haven't learned a lot of kanji yet. Personally, I think it's much harder to read kana-only text, but I don't know what a native would have to say about that. I think they would agree though. Japanese text without kanji is a huge eyesore and parsing the text takes much more effort when you don't have the kanji neatly organizing the ideas as they flow. They don't usually have spaces in their text mind you.

The question is hard to answer because "word" is itself a word that doesn't quite match the way Japanese grammar does stuff. In Japanese grammar, a period is composed of one or more「文節」which are themselves composed of one or more「単語」each. So 「私こそが」 is one single 文節 made up of three 単語, namely, 私, こそ and が. This is why you always see the text divided like that in games and such. They're separating the 文節.
