Ping Pong had an amazing OST and fit really well, but after listening to it about 10 times, I don't think it stands out as one of the greats.
Motherfucking Giant Robo has a fucking excellent soundtrack. Big parts of it sound so spaghetti western that I'd think it was Morricone if I didn't know better.

I regularly listen to Death Note's OST. Specifically, anything that Hideki Taniuichi does. He does post-rock incredibly well.
Fun facts: Taniuchi is also the composer for Kaiji and Aoi Bungaku, both of which have god-tier OSTs as well.

The entire OST is 10/10. The other series that I'd would probably give this spot to would be Umineko, but that's cheating since its OST is borrowed from the VN, even if it is literally perfect.
