There is zero reason to choose an objectively inferior, decade old eroge VN over a far superior, better artstyle, animated, version of it.
Additionally the other fate releases spoil Fate/Zero -- the best standalone release of the entire fate series. It is idioitic to complain about how it ruins a subpar route like HF, when reading HF/FSN spoils Fate/Zero.

The reason this statement is a joke though is because Urobuchi himself says Nasu already had most of Zero mapped out or written before he came on board, and Nasu helped Co-Write when they actually got into it as well. Nasu did maybe 75% of the work there including creating all the characters and nixing any ideas he didn't care for like Urobuchi wanting to make one of the Assassins a child who lived with Waver.
Nasu has gotten better and that reflects with Zero and his other recent works, but people see that as more Urobuchi being plain better. Sure it was still a team effort, but even Urobuchi talks about how he was only a part of the process and a lot of it was there from the start.

As a person without any sunk costs, Fate/Zero is the setup to the story, explains the mechanics, and is fantastic. If anything it'll set you up for dissapointment if you jump into the VN after that. However the Ufotable UBW anime is very good.
You can go down the VN rabbithole after you enjoy the glorious anime. Some people claim "The anime is their reward for waiting" (meaning VNfags), but you get to enjoy it first and foremost.
There's a reason F/Z sold so amazingly well and UBW isn't projected to sell even close.

The only thing they really made Shirou look better at was holding his projections longer. In the VN, they break when he and Kuzuki go at it, but in the show he keeps them.
I think they did it because of the way framed the shots. They waited until after the attack to show fully what he made to add a dramatic effect.

It was a story Type Moon didn't feel like telling themselves, so they let someone else tell it. That's a totally different situation from Fate/Stay Night.
In practical terms we know that it didn't mean much, because Nasu has said he wanted to let Urobuchi write what he wanted. Urobuchi himself was more concerned about being true to the established setting and not disappointing fans. Approval is natural when working with someone else's copyright, but Nasu is definitely going to be a lot more involved when it's something reworking a story he actually wrote. See: Garden of Sinners.

There are a bunch of interviews that talk about how various characters turned out, Urobochi is only credited with Maiya Hisau as being his soul creation for Caster he said he ran out of ideas and Nasu nixed the one he had about a Chinese Xian so that he came up with Bluebeard. He also came up with the idea of Waver as a "King of Cowards" but said everybody fell in love with the character so he got reworked to the point of being completely different. Nasu says that he would have written Kariya differently and that he didn't expect Lancer to wind up as he did in the story.
Thats all I remember, it's not as clear cut as this guy made this guy, but obviously stuff like Kotomine and Kiritsugu was pretty much set in stone since it was already discussed in stay night.

That's been his plan for years. He had guest writers work on most of Hollow Ataraxia, had Urobuchi on Zero, gave out Prisma to an artist who made doujins that he liked, and even now he's handing off stuff to his friends and other people in the industry. Apocrypha, Strange Fake, Case Files.
Nasu made an interesting and popular world, and to capitalize on that, he allows other people to write for it. He makes money, they make money, and fans get more of what they want.
