any decent media player will add the grain via an option that can be disabled. it doesn't need to bloat the file size by encoding them into it.

Depends on the popularity of the show and quality of the source. Most of the well respected classics that have good transfers have grainy BD encodes, and most of the encoders who are the first to jump on new releases seem to prefer keeping grain in.
