The only way I could see it work would be some sort of 'Animatrix' style presentation. Different characters, areas, bosses, and lore covered in various shorts. Keep the dialogue brief and focus on subtext and subtle story-telling techniques.

If it was me, I'd have it focus on one of the previous undead who tried to fulfill the chosen prophecy and failed. The game certainly implies you are not the first.

No. The focal character has no personality, the side characters don't have enough impact on the 'plot', and the plot itself is just boring monster-of-the-week format.
No one would be stupid enough to release an anime where 75% of the time there's no dialog happening, and you fags would hate what they'd have to do to it to make it marketable.

There would have to be a number of stipulations.
1: Chosen Undead should be as impartial as possible so as to act more as a means of keeping the plot moving forward rather than a character. This means he can never speak outside of maybe grunts and anguished moans, he can't remove his helmet, or if he does his head can't be visible, and he can't join any covenant.
2: The topic of covenants will be explored in great detail by the various side characters aligned to them. Solaire with Sunlight, Anor Londo Firekeeper with Blades of the Darkmoon, Lautrec with Fina's covenant, and so on. We should get to see their backstory and the circumstances of their joining.
3: Need an episode dedicated to Priscilla. A tactful dose of moe is acceptable, just don't go overboard with it.
4: Despite not joining the The Fair Lady's covenant, Solaire isn't going to die in Lost Izalith. He just isn't, that's not happening.
5: A whole grueling episode will be dedicated to the fight with those sons of bitches Ornstien and Smough. Smough dies first.
I know there's more, but that's all I can think of for now.
